Thing 1 vs Thing 2

So, we did this thing…which were pretty much my words to family members when I was about to tell them about this crazy journey we have begun! After starting the Pinot Noir, we “had” to try a few more wines, but more as an experiment. The plan was to make two batches of the same wine but vary them in some way. This is where Thing 1 and Thing 2 developed. Both are a Chilean Malbec, which is a deep in color, full bodied wine, known for its earthy tones and silky mouthfeel. They are different in two ways, but I am not going to tell you how! Perhaps some day you will taste them and tell me the difference between them.

Of course, we did a taste test just before secondary fermentation to see how the wine tasted. It had been 8 days since fermentation began, where all the sugars are converting to alcohol (basically). Ask my nerdy husband and I am sure he can give you the finer details! At this point, the wine was ready to move to secondary fermentation. At approximately 12.5% ABV, it was a little sweet to the taste, not overpowering, still gassing out, which you can tell from the bubbliness of the beverage, but overall, I was pleased with it’s 8 day progress! Can’t wait to see what 8 months will bring!
